Blueberry Banana Oatmeal

Ingredients

1 cup water

1/2 cup steel cut oats (90g)

1 Tbsp slivered almonds

1 medium banana

1/2 cup blueberries (fresh or frozen)

1 Tbsp chia seeds

nut milk to taste

Directions

  1. Bring steel cut oats and water to a boil, lower heat and cover to simmer until tender (7-10 minutes).
  2. Transfer steel cut oats to a bowl, add chia seeds, slivered almonds, and blueberries and mix.
  3. Cover with sliced banana and enjoy!

Tips and Considerations

Frozen blueberries will add just a bit of crunch and will cool oatmeal quickly so it’s ready to eat.

Your choice of nut milk and how much you add will change the calories and some of the macros.

Substitute ground flax meal or hemp hearts for chia seeds.

Substitute walnuts for almonds.

Substitute quick cooking steel cut oats or rolled oats if you prefer.
